The world is going through a phase in which saying “no” has become an act of maturity. In the bar world, this shift is clear: for years, the focus was on total availability, speed and constant flexibility. Today, a new grammar of work is emerging, one that calls for taking a stand, choosing one’s own pace and defending what gives real value to the profession. The direction of “no” strengthens a conviction and shows that quality is built by carefully choosing what to leave at the door.

Coqtail
/ kɒk·teɪl /
There are many stories about the origins of the first cocktail. Many of them are fanciful myths, and some have never been confirmed. However, they all have one fundamental element in common: a rooster's tail. Used as a garnish, and evoked by the shape of a carafe or the colors of a liquid mixture, it represents the inspiration that guided the first bartenders as they experimented with the rudiments of mixology. This gave rise to Coqtail, our neologism that recounts the history of fine drinking.
