In the debate surrounding the quality of mixed drinks, measure is often reduced to a technical matter: accurate pours, the balance between sweetness, bitterness and acidity, the replicability of a recipe. But is that enough? Not really. In the bar of the 21st century, what we identify as “measure” has become something far broader — touching organization, service, spatial design and the management of time.

Coqtail
/ kɒk·teɪl /
There are many stories about the origins of the first cocktail. Many of them are fanciful myths, and some have never been confirmed. However, they all have one fundamental element in common: a rooster's tail. Used as a garnish, and evoked by the shape of a carafe or the colors of a liquid mixture, it represents the inspiration that guided the first bartenders as they experimented with the rudiments of mixology. This gave rise to Coqtail, our neologism that recounts the history of fine drinking.
